CORNFLAKE COOKIES

Ingredients:-


125 grams butter, softened
1/2 cup caster sugar
1 egg
1/2 teaspoon vanilla extract
1 cup SR flour
1 cup cornflakes plus 1 1/2 cups extra for coating
1/3 cup chocolate chips (milk choc)
1/3 cup sultanas


Method:-


1. Preheat oven to 180 deg C. Grease two oven trays.

2. In a large bowl, using electric mixer, beat butter and
    sugar together until light and fluffy.

3. Fold flour, 1 cup cornflakes, choc chips and sultanas
    through.

4. Lightly crush remaining cornflakes .  Roll tablespoons
   of mixture into balls, toss in cornflakes.  Place on
   prepared trays, 3 cm apart.

5. Bake for 12-15 minutes until golden.  Cool on trays
   before transferring to wire rack to cool completely,
